About This Dish

Thai boat noodles are small, intensely savory bowls of rice noodles and deeply seasoned beef or pork broth with herbs.

Prepare all ingredients before you start. Taste and adjust seasoning as you cook, using fresh produce and safe cooking temperatures for meat and seafood.

Step-by-Step Instructions

  1. Prepare a well-seasoned broth with meat bones or stock, aromatics and warming spices; simmer slowly for depth.
  2. Strain the broth and adjust with soy sauce, fish sauce and a little sweetness.
  3. Cook sliced meat or meatballs in simmering broth until fully cooked.
  4. Blanch rice noodles in a separate pot until tender but resilient.
  5. Quickly blanch morning glory or bean sprouts for the garnish.
  6. Divide noodles into small bowls and arrange the cooked meat and vegetables on top.
  7. Ladle in very hot broth and sprinkle with fried garlic and herbs.
  8. Offer chili flakes, vinegar and fish sauce for individual seasoning.
