About This Dish

Khao Tom Mat are traditional banana-leaf parcels of sweet coconut sticky rice and banana, gently steamed until fragrant.

Prepare all ingredients before you start. Taste and adjust seasoning as you cook, using fresh produce and safe cooking temperatures for meat and seafood.

Step-by-Step Instructions

  1. Rinse glutinous rice, soak for several hours and drain completely.
  2. Warm coconut milk with sugar and a pinch of salt, stirring until dissolved.
  3. Stir rice into the sweet coconut mixture over low heat until the grains begin absorbing liquid but are not fully cooked.
  4. Cool the rice mixture enough to handle and cut firm bananas into short sections.
  5. Soften cleaned banana leaves briefly over low heat to prevent tearing.
  6. Spoon rice onto each leaf, place banana in the center and cover with a little more rice.
  7. Fold into tight parcels and secure with kitchen string or leaf strips.
  8. Steam until the rice is tender and the parcels are fragrant, then cool slightly before unwrapping.
Chef’s Cooking Tips

Keep parcels snug so they hold their shape, but leave enough room for sticky rice to expand while steaming.
