About This Dish

Lemongrass grilled chicken gets its fragrance from crushed fresh lemongrass, garlic, coriander root and a savory marinade.

Prepare all ingredients before you start. Taste and adjust seasoning as you cook, using fresh produce and safe cooking temperatures for meat and seafood.

Step-by-Step Instructions

  1. Bruise lemongrass, chop garlic and coriander root, then pound them into a coarse aromatic paste.
  2. Stir the paste with fish sauce, soy sauce, a touch of sugar and oil.
  3. Rub marinade all over chicken pieces and refrigerate covered for several hours.
  4. Bring chicken out briefly while preheating the grill to medium heat.
  5. Grill chicken skin-side down first, turning as needed so the outside browns without burning.
  6. Continue until the thickest part reaches a safe internal temperature of 74°C / 165°F.
  7. Rest for 5 minutes before slicing, then scatter fresh herbs over the top.
  8. Serve with sticky rice and a lime-chili dipping sauce.
Chef’s Cooking Tips

Crushed lemongrass gives better fragrance than large unbruised pieces. Use a thermometer for safe, juicy chicken.
