About This Dish

Som Tam is a crunchy green-papaya salad with lime, fish sauce, palm sugar and chili. The ingredients are bruised rather than pulverized, so the vegetables remain lively and crisp.

Prepare all ingredients before you start. Taste and adjust seasoning as you cook, using fresh produce and safe cooking temperatures for meat and seafood.

Step-by-Step Instructions

  1. Peel and shred green papaya into thin strands; rinse and drain until crisp.
  2. Prepare long beans, cherry tomatoes, garlic, chilies and roasted peanuts.
  3. In a large mortar, lightly pound garlic and chilies to release aroma.
  4. Add long beans and bruise just enough to soften their skins.
  5. Stir in lime juice, fish sauce and palm sugar; taste before adding the papaya.
  6. Add tomatoes and gently crush so some juices enter the dressing.
  7. Add shredded papaya, turning and pressing gently with a spoon and pestle to distribute seasoning.
  8. Fold in peanuts and dried shrimp if using; taste once more and adjust sourness or heat.
  9. Transfer immediately to a plate and serve with fresh vegetables or sticky rice.
Chef’s Cooking Tips

Use firm unripe papaya. Do not pound it into a paste: the best Som Tam is still crisp.
